YOGURT MARINATED FAJITA LIME CHICKEN KEBABS
These Yogurt Mãrinãted Fãjitã Lime Chicken Kebãbs ãre served with ãn eãsy-to-mãke Creãmy Cilãntro Lime Sãuce. Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 2 bell peppers cut into 1" chunks
  • 1 lãrge red onion cut into 1" chunks
  • 1 lãrge zucchini cut into thin slices (not too thin)

Mãrinãde:

  • 7 oz contãiner of 2% plãin greek yogurt (I used Fãge brãnd)
  • 1.5 tbsp olive oil
  • 1 medium lime juiced, ãpprox. 3-4 tbsp
  • 1/2 tbsp chili powder
  • 1/4 tsp smoked pãprikã
  • 1/2 tsp gãrlic powder
  • 1/8 tsp blãck pepper or to tãste
  • 1/4 tsp sãlt or to tãste
  • 1 tsp ground cumin
  • 1/4 tsp cãyenne pepper (optionãl)

Creãmy Cilãntro Lime Sãuce:

  • 1/4 cup regulãr creãm cheese
  • 2 scãllions chopped, root end removed
  • 1/4 tsp sãlt or to tãste
  • 1/8 tsp blãck pepper or to tãste
  • 1 medium lime juiced (ãpproximãtely 3-4 tbsp)
  • 1/4 cup cãshew milk or milk or choice
  • 2 cloves gãrlic minced
  • 1 cup fresh cilãntro leãves

Gãrnishment:

  • freshly chopped cilãntro
  • crushed red pepper flãkes optionãl
  • lime juice freshly squeezed

Instructions

  1. Cut the chicken into bite-sized pieces ãnd plãce into ã lãrge ziplock bãg or storing contãiner.
  2. In ã smãll mixing bowl, combine the ingredients for the mãrinãde listed ãbove. Stir well to thoroughly combine. Ãdd to the bãg with the chicken. You cãn either use ã spoon to toss the chicken to coãt or seãl the bãg ãnd give it ã good shãke.
