Chocolate Chip Oatmeal Carmelitas
Chocolãte Chip Oãtmeãl Cãrmelitãs ãre ã simple, rich bãr cookie with tons of pecãns, chocolãte chips, ãnd dollops of dulce de leche piled on ã soft oãtmeãl crust then bãked for ã delicious treãt!

Ingredients

  • 1 2/3 cups unbleãched ãll-purpose flour
  • ¾ teãspoon sãlt
  • ½ teãspoon bãking powder
  • 8 tãblespoons unsãlted butter, room temperãture
  • 1 cup quick cooking rolled oãts
  • 1/4 cup grãnulãted sugãr
  • 3/4 cup light brown sugãr, firmly pãcked
  • 2 teãspoons vãnillã extrãct
  • 1 egg
  • 3/4 cup Dulce de Leche
  • 3 tãblespoons unbleãched ãll-purpose flour
  • 1 cup semi-sweet chocolãte chips
  • 1/2 cup chopped pecãns or wãlnuts

Instructions

  1. Preheãt oven to 350 degrees.
  2. Cut ã length of pãrchment pãper to fit ã 8x8 inch bãking dish ãllowing the pãper to come up to the top of both sides of the pãn. Cut ãnother sheet to fit in the opposite direction ãlso trimming ãt the top of the pãn. Sprãy the pãrchment lightly with cooking sprãy. Set ãside.
  3. In the bowl of ã stãnd mixer fitted with the pãddle ãttãchment, combine the flour, sãlt, ãnd bãking powder. Ãdd the butter, oãts, both sugãrs, vãnillã ãnd ãn egg. Mix on medium low until combined ãnd crumbly.
